This is a fabulous summer pasta salad! If you don’t love sausage, simply swap it for anything you like! Shrimp would be amazing or grilled chicken, too!

Pasta Salad with Hot Bacon Dressing
Ingredients
Roasted Corn
- 3 cobs corn
- pat of butter for each
Sausage
- 1 cheese & parsley sausage ring
Pasta
- 10 ounces orecchiette cooked and drained.
Hot Bacon Dressing
- 6 slices bacon fried up and chopped
- ½ cup extra virgin olive oil
- 1 shallot thinly sliced
- 2 garlic cloves grated
- salt and pepper to taste
- Garnish
- parsley chopped
- 3 scallions sliced
Instructions
Corn
- Season with salt/pepper. Add pat of butter to each.
- Roast 35 mins in the oven (400°) on a foil lined jellyroll pan, turning occasionally.
- Slice off the cob when done.
Sausage
- Pan sear on both sides to brown and place in oven at 425 until finished cooking all the way though. Then slice.
Hot Bacon Dressing
- Add the hot bacon into the oil (I used a mason jar) along with the other ingredients. Shake to combine.
Assembly
- Pour hot bacon dressing onto the pasta and stir.
- Top with the sausage and corn.
- Garnish with scallions and parsley, if desired.
