Love, love, love these! Loads of peanut butter and such a great texture! Crispy outside, soft inside!

Peanut Butter Monster Cookies
Ingredients
- ½ cup room temp salted butter
- ½ cup peanut butter
- ¾ cup light brown sugar
- ¼ cup granulated sugar
- 1 tsp vanilla bean paste
- 1 egg
- 1 tsp. baking soda
- ¼ tsp. kosher salt
- 2 tsp. cornstarch
- 1¼ c. quick oats
- 1 c. all-purpose flour
- 200 g. mini M&Ms
- 200 g. mini semi-sweet chocolate chips
- 50 g. peanut butter chips
- 50 g chopped peanut butter cups
- Plus extras of each for out of the oven decorating
Instructions
- Preheat oven to 375°F
- Beat butter and peanut butter.
- Add sugars, vanilla, and egg until smooth.
- Add flour, oats, salt, baking soda, and cornstarch. Mix all.
- Fold in M&Ms, chocolate chips, peanut butter chips, and chopped peanut butter cups.
- Form 4 ounce mounds. Can bake 6 at a time. Roll into balls and poke to create texture.
- Bake for 12–13 mins, remove and add more goodies on top.
