Pesto and jam? Not quite your usual combination but oh, so yummy!!!! They just work together….you have to give it a try! I made my jam using fresh picked strawberries right from the farm. We used nice, large sea scallops in this dish and they were fabulous. We like to buy them at Whole Foods!S
Scallops:
Season both sides with salt/pepper. Heat 2 Tablespoons olive oil. Once hot, add scallops and cook on both sides to brown and be sure they are cooked through.
