These noodles are outrageous! I used my kitchen aid roller and rolled them up to #5 so they were nice and thin. Left them covered with a towel on the counter for a few hours before cooking and they were done in about 4 minutes. I served them tossed with my all vodka sauce and they were restaurant quality! This recipe was adjusted from King Arthur. They call for discard but my starter was close to peak and it worked perfectly. Just add water slowly because you may not need it all!

Sourdough Fettucine
Ingredients
- 100 g ‘00’ Pizza Flour
- 250 g Semolina Flour
- 50 g sourdough starter unfed/discard (or I even used at peak)
- 2 large eggs
- 12 g olive oil
- 10 g kosher salt
- 30 g to 45g water you will add slowly as may not need it all
Instructions
- In a mixer with dough hook combine, flours, eggs, oil, salt, discard.
- Add water slowly until it holds together. I had a little water left over. Let the mixer knead for about 5 minutes until it is smooth and elastic. It will feel stiff.
- Let rest 1 hour covered.
- Divide into 3 sections and dust with "00" flour. Put through pasta roller starting at #1 and going up to #5. Let sheets rest 15 mins dusted with flour. Then cut through pasta cutter.
- Can rest on counter covered with a towel for a few hours until cooking time.Cook in boiling water. I cooked half the batch and my noodles were done in 4 mins. Can fridge or freeze noodles if you prefer.
