I got this wonderful idea from my friend’s blog called Life To Table. You must check it out-she has some very unique and delicious ideas! I had the perfect tool for making zoodles (zucchini + noodles= zoodles). I bought it at Pampered Chef but you could even use a Julienne Peeler! I also grilled some chicken and made my favorite pesto recipe to top my zoodles. Hubby came home with more zucchini last night. I think it was a hint for more zoodles!
Twirl 6 zucchinis into spirals or use a julienne peeler. CooK in 1 tablespoon olive oil and 2 sliced pieces od garlic just for a few minutes. Remove any water that may be released into the pan. Pour on your pesto and carefully stir it up! Add in the sliced grilled chicken and top with pine nuts and avocado.
In a food processor, chop:
2 cups basil and 6 garlic cloves.
Stream in 3/4c. olive oil.
Add 1c. Parmesan cheese and 2 ounces pine nuts.
ADD 1 TSP SALT AND SOME FRESH PEPPER!
Salt and pepper your cutlets and cook in a grill pan to brown on both sides. Slice.
