Adapted from A Little Bit Crunchy A Little Bit Rock and Roll
Ingredients:
1/2 cup unsalted butter
1/4 cup dark chocolate chips
1 cup sugar
2 eggs
1 teaspoon vanilla
1/3 cup dark cocoa
1/2 cup flour
1/4 teaspoon salt
1/4 teaspoon baking powder
For the frosting:
2 cups powdered sugar
1/2 cup unsalted butter, room temperature
10 ounce jar maraschino cherries, drained, juice reserved
1 tablespoons milk
1-2 teaspoons reserved maraschino cherry juice
dab of pink food coloring gel paste
1 teaspoon vanilla extract
1/4 cup cup dark chocolate chips or DOVE chocolate (I used DOVE CHOCOLATE DISCOVERIES!!!! YOU CAN ORDER THESE FROM MY CHOCOLATIER, KRISTINA HERE!

Directions:
1. Preheat the oven to 350 degrees F. Line 7×11 pan with nonstick foil.
2. Drain the cherries and coarsely chop them. Use a kitchen scissor-easy! Spread them out on a paper towel to dry slightly.
3. In a small bowl, whisk together the flour, dark cocoa powder, salt, and baking powder.
4. Melt the butter and pour into a large bowl. Whisk in the dark chocolate chips until melted.
5. Whisk in the sugar and then the eggs.
6. Stir in the dry ingredients.
7. Pour into the prepared pan and bake for 20-25 minutes. Cool completely.
8. For the buttercream, beat the butter together with the powdered sugar and extract. Add the milk and maraschino cherry juice until it reaches a desired consistency. Add a dab of pink food coloring paste! Fold in the chopped cherries.
9. Frost the cooled brownies. Chill for 30 minutes and then cut into squares.
10. Melt the remaining 1/4 cup chocolate chips and drizzle over the frosted cut brownies.

Loved the look of these and the BF likes cherry desserts.
Made with a few changes….
Betty Crocker fudge brownie box mix….as directed except one egg vs. two
Non-stick cookie sheet (9 1/2 x 13 1/4)…one spray of nonstick spray…spread with a paper towel including the sides
350 degree oven on the upper rack, for 18 mins; cking at 10 mins
Completely cool before even cutting
Buttercream…1 stick Land O’lakes UNSALTED butter and 1 oversize tbsp. Crisco baking sticks both at room temp
Chilled ceramic bowl…butter, Crisco, extract and powered sugar mix slightly with rubber spatula to blend thoroughly. Use a hand mixer at this point, added in 2 tsp of the cherry juice, 1 tbsp. of milk and the pink food coloring.
I found at this time that it had zero cherry flavor which I really wanted…so in the cabinet I searched. I found cherry flavored gelatin, cherry brandy, cherry coke and a can of Oregon red tart cherries in juice . I opted to use the gelatin.
Added approx. 1 tbsp. and blended with rubber spatula.
Cherries dried between two pcs of paper towels thoroughly and coarsely cut with kitchen scissors; better than knife. Key here…THROUGHLY dry the cherries.
Now I did NOT frost the entire cookie sheet.
Cut into single serving pcs.
I also did not add all the chopped cherries to the butter cream….small batches for each pc of brownie
Chilled dessert plates with drizzled cherry juice and melted dark chocolate…sparingly
Removed chilled plates sparingly sprinkled with powdered sugar….sparingly
Placed brownie with buttercream frosting on plate and served
I will make again…will try with the brandy or the coke next
BF loved these….frosting not too wet and not too sweet.

So when you say you used a cookie sheet, you ended up with very thin little brownies?? Just making sure. I would prefer to use the box mix because I’m limited on time. Just want to make sure I understand exactly what it is that you did.

HI there…thanks for the interest…I did use the cookie sheet but they weren’t as wimpy as you may think LOL
We like sweets as much as the next person, but wanted to do it in moderation so this worked for us. They were not
so thin that you couldn’t handle them to eat or frost…
and BTW…I did make these with the dark choc brownie box mix, too
Probably should have mentioned that when I wrote the comment…especially since the name references “DARK” lol
Short on time…I hear ya on that too…that’s why I went for box mix…and the only change was to an ingredient. Box deff lessens time in the kitchen more time to enjoy 🙂
