No Bake Chocolate Chip Oreo Ganache Cheesecake
Sometimes it is just too hot outside to turn on the oven and heat up the house. If you still need a dessert during the heat, you may choose to turn to a dessert that is no-bake. I have lots of options for you that are no-bake and I highly recommend this No Bake Chocolate Chip Oreo Ganache Cheesecake! This is not only a show stopper but it tastes amazing. It starts with a super tall Oreo crust that doesn’t even need to be baked. A layer of chocolate ganache then gets spread on top making it extra decadent. It gets filled with a yummy cream cheese filling including some whipped cream and chocolate chips. I topped that off with some more ganache, fresh whipped cream, oreos, chocolate chips and chocolate sauce. Hello yumminess!
No Bake Chocolate Chip Oreo Ganache Cheesecake
Ingredients
Crust
- 14 ounces Oreos processed in food processor
- 8 T. salted butter melted
Ganache
- 1 c. chocolate chips
- ⅓ c. heavy cream
Cheesecake filling
- ½ cup heavy cream
- 20 ounces cream cheese room temp
- ½ cup powdered sugar
- ½ cup sour cream
- 1 tsp vanilla
- ½ cup mini chocolate chips
ganache topping
- ¼ cup + 2 T. heavy cream
- 1 cup chocolate chips
Decoration-optional
- fresh whipped cream
- 5 Oreos cut in half plus 3 chopped Oreos
- ¼ c. chocolate chips
- chocolate sauce for drizzle
Instructions
Crust
- Mix butter and cookie crumbs.
- Spray 9 inch springform pan with nonstick spray.
- Press crumbs into the bottom and up the sides.
- Chill in fridge 30 mins.
Ganache
- Heat cream in microwave safe bowl to almost a boil.
- Add chips and cover with a paper towel for one min.
- Stir smooth and spread on crust.
- Chill again 30 mins.
Cheesecake Filling
- Beat cream to stiff peaks and set to the side.
- Beat cream cheese smooth.
- Add sugar and mix.
- Add sour cream and vanilla.
- Fold in the whipped cream and chips.
- Pour over ganache in the crust.
- Cover and freeze 2 hours.
ganache topping
- Heat cream in microwave safe bowl to almost a boil.
- Add chips and cover with a paper towel for one min.
- Stir smooth and spread on the cold cheesecake.
- Freeze 10 minutes.
- Remove sprinform sides and transfer to cake plate if desired. (I loosened bottom wit a sharp knife)
Decorate
- Pipe on whipped cream, top with Oreos, drizzle on sauce, chips and chopped Oreos
