Oooooooh!!! This dinner was fabulous! A one pan wonder…a perfect skillet….the ultimate weeknight dinner! Thanks Sally,wink wink!

Sausage,Peppers, Onions and Chicken Skillet
Ingredients
- Ingredients
- 3 boneless skin-on chicken breasts (seasoned with salt, pepper, garlic powder)
- 2 packages Premio sausage left in the casings (I used broccoli rabe, provolone)
- 4 peppers sliced (2 yellow, 2 orange)
- 3 red onions sliced
- 4 cloves garlic smashed
- 1 T. butter
- 1½ cups chicken broth
- Salt and pepper to taste
- olive oil
- ½ cup grated Parmesan cheese
- 1 T. butter
Instructions
- Heat a deep-dish skillet with oil and sear the chicken to brown on both sides, skin-side down first 5–7 minutes.
- Remove to a plate.
- Brown the sausages in same skillet.
- Remove to the plate with the chicken.
- Add peppers and onions to the pan.
- Cook 8–10 minutes until softened and lightly caramelized.
- Stir in garlic and cook for 1 minute with 1 T. butter.
- Pour in the chicken broth.
- Scrape up all the flavorful browned bits from the bottom of the pan.
- Return the meats, nestle the chicken and sausage into the peppers and onions.
- Add paremsan cheese.
- Cover and simmer gently for 20–25 minutes, or until the chicken reaches 165°F and the sausage is fully cooked.
- Add 1 T. butter and continue simmering uncovered to concentrate the sauce.
- Season with salt/pepper ad serve over angel hair pasta.
