Have you eaten at Dirty Taco? We are HOOKED on their birria tacos! It is basically a quesadilla dipped in a rich broth and pan fried while stuffed with seasoned meat and melty cheese! Here is my take below using homemade brisket and Oaxaca cheese! The cheese is a Spanish mozzarella and melts beautifully! I found it easily at Whole Foods.

Birria Tacos
Ingredients
- Brisket shredded
- broth and onions from the brisket
- flour tortillas
- Oaxaca cheese pulled into pieces
- avocado oil
Instructions
- Heat oil in pan.
- Dip just one side of the tortilla into the broth quickly and lay broth side down into hot pan.
- Use tongs to pile on brisket, onions and cheese to one side.
- Fold tortilla in half and pan fry both sides until golden.
- Serve with extra broth on the side for dipping.
