Cadbury Mini Egg Cookies
These cookies just scream EASTER! These are the perfect texture with crispy edges and soft centers. These will make the kids very happy and the Easter Bunny, too! You may also love Cadbury Egg Chocolate Cookies and MINI CADBURY CREME EGG BARK.

Cadbury Mini Egg Cookies
Ingredients
- 230 cold salted butter cut into cubes
- 165 g caster sugar
- 165 g light brown sugar
- 160 g chopped mini eggs place in a ziplock bag and smash with meat tenderizer
- 150 g milk chocolate chips
- 150 g white chocolate chips
- 500 g all purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 2 eggs
Instructions
- Beat butter to break it up.
- Add sugars so "pebbles" form.
- Add in mini eggs and chips.
- Add dry ingredients.
- Finally, add eggs and mix until the dough forms together.
- Measure out 5 ounce cookies and bake on parchment lined jelly roll sheets pans. (To avoid dark bottoms, place the jellyroll pan on top of an inverted jellyroll pan.) If using two pans bake 14-16 mins. (one pan alone will bake in 13-14 mins.)
