Fruity Pebbles Cheesecake
Fruity Pebbles Cheesecake will bring out your inner child and remind you of your cereal eating days! It is fruity and wonderful!
Fruity Pebbles Cheesecake
Ingredients
Crust
- ¾c. graham cracker crumbs
- ½ T. sugar
- 3 T. melted butter
- *Note: for a thicker crust going up the sides, you can double the ingredients
- 2 T. fruity pebbles
Cheesecake
- 24 ounces soft cream cheese
- 1¼c. sugar
- 3 T. cornstarch
- 1½ tsp. vanilla
- 2 eggs
- ½c. plus 1 T. heavy cream
- 1 c. Fruity Pebbles cereal
Garnish
- Whipped cream and cereal
Instructions
- Preheat oven 350. Grease a 6x3 inch pan with removable bottom with Pam and line with parchment.
Crust
- Combine ingredients and press into the bottom of pan.
- Bake 8 minutes and let cool. Sprinkle 2 T. cereal on crust.
Cheesecake
- Beat cream cheese on low until smooth.
- Beat in sugar, cornstarch and vanilla.
- Add eggs, scraping down sides as needed.
- Pour in cream and mix just until combined.
- Pour over cooled crust alternating with layers of cereal.
- Top layer should be a sprinkling of Fruity Pebbles.
- Place in cheesecake moat or create a water bath.
- Bake 1 hour and then shut oven off leaving cheesecake in the oven for an additional 45 minutes.
- Then crack door open for another 45 mins.
