You don’t see too many “healthy” cookies on my blog but this one sure is a keeper! Hearty, healthy and scrumptious. A perfect afternoon snack or on-the-go breakfast for us cookie lovers!!! Here is my version of a healthy cookie! These are perfectly chewy, too!!!! Feel free to choose your own add-ins! Any kind of nuts/seeds would work well!
Hugs Healthy Cookie
Ingredients:
3/4 cup nut butters (I used half almond butter and half cashew butter) I used the brand Artisana
1/4 cup coconut butter (warmed to easily be stirred)
1 egg
1 cup coconut sugar
chia seeds, for lightly sprinkling (or sesame seeds)
chopped pistachios and goji berries to top the cookies (just eyeball the amount)
Directions:
Mix all ingredients together by hand. Scoop on parchment lined sheets or silpat. Press down gently. Top with Pistachios, goji berries and chia seeds.
Bake at 375 for about 10 minutes or until set. Don’t overbake or they will be crunchy instead of chewy. Unless of course you prefer crunchy cookies!!! Let cool completely on the sheet before removing or they will break. Makes about 10 hearty, healthy and delicious cookies!!!
