I love all things s’mores. There are not many treats better than roasted marshmallows in my world. (Well, except for peanut butter cups, Hershey Bars, Chocolate cake, well, you get the idea!) When I read the name of this recipe-Inside out s’mores-I was intrigued. The graham crackers and marshmallows are actually baked as an inside layer between 2 brownie layers. Of course, I had to try it out. I used a boxed Ghirardelli mix to make these extra simple and they did not disappoint. Of course, a homemade recipe wouldn’t hurt either! Here is one of my favorites if you want to go the homemade route! If so, halve the brownie recipe here!!
Inside Out Brownie S’mores
1 box Ghirardelli brownie mix to fit 8×8 or 9×9 pan (If your mix calls for 9×13 just use extra grahams and marshmallows)
5 full sheet graham crackers to fit the pan
mini marshmallows (I didn’t measure but enough to cover the grahams
Prepare brownie mix according to box. Pour half in 8×8 pan lined with nonstick foil. Lay graham crackers on top to cover the batter. Sprinkle min marshmallows on top generously. Spread on the rest of the brownie batter carefully. Bake at 350 for 25-20 minutes. Cool and cut.
