Jake’s Banana Bread
Banana bread is similar to chocolate chip cookies because you can never have too many recipes for either one! This one my youngest son loves hence naming it after him. As soon as he sees rotten bananas on the counter you can hear him begging to make banana bread! How can one say no to such a cute request? You can’t! Soooo, banana bread it is! Again and again and again. Seriously though, this recipe is easy and takes only a few minutes to put together. The hardest part is the 45 minute wait while it bakes. Sometimes we even add chocolate chips! Just an idea. If you do add chips, I recommend tossing them with a tablespoon of flour first. If you don’t, they tend to sink down to the bottom! If you’re an almond lover you can also swap 1 teaspoon of vanilla for a teaspoon of almond extract. Also, delicious but not always a hit with kids. So, it depend who you are baking for! This bread is perfect served at a brunch or for an afternoon snack with tea!
I have also made this in a 10 inch cast iron skillet and baked for 30 mins. Amazing!

You can also use this recipe to make muffins and add some chips! Toss the chips with a T. flour so they don’t sink.
Jake's Banana Bread
Ingredients
- ½ cup soft butter
- 1 c. sugar
- 2 eggs
- 2 tsp. vanilla
- 2 very ripe bananas mashed
- ¼ c. sour cream
- 1 ½ c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
Instructions
- Beat butter and sugar.
- Add eggs and blend.
- Add vanilla, bananas.
- Add sour cream.
- Add dry ingredients just to blend.
- (Add choc chips if desired at this point.)
- Pour into a loaf pan that is greased.
- Bake at 350 about 1 hour. Check at 45 mins.
- If making muffins, check at 15 mins.
