When you need a fast and fabulous dessert to feed a crowd, this is it! I made about 16 cream puffs from this recipe and the filling makes enough for you to generously stuff each one. No skimping allowed on the filling because it is THE BEST! This time I piped my shells with a pastry bag but that is definitely not necessary. I usually just use 2 spoons and push the dough onto the cookie sheet! Either way they will look pretty. A nice dusting of powdered sugar finished them off, too! Try these out and see just how simple it is to conquer the cream puff!!!
You’ll Need:
Piping Bag
Parchment Paper
Cookie Sheets
- 1 stick butter (8 Tablespoons)
- 1 cup water
- 1 tsp vanilla
- 1 tsp. sugar
- 4 eggs
- 1c flour
- MOM'S FAMOUS FILLING:
- 1 pint heavy cream
- 1 package (3.4 OUNCES) instant vanilla pudding
- ⅓ cup milk
- Makes approx 16
- Bring the butter, sugar, water and vanilla to a boil.
- Add the flour and stir constantly until it leaves the side of the pot and forms a ball.
- Remove and cool.
- Beat in 4 eggs, one at a time until smooth.
- Drop by T. onto parchment lined cookie sheets
- Bake at 400 degrees for 15 mins. Reduce to 350 for 15 mins more.
- Remove and immediately make a small slit on the side with a sharp knife to let the steam escape.
- LET COOL.
- Slice in half and pipe or scoop in Mom's filling.
- Dust with powdered sugar.
- Beat the cream, pudding powder and milk in a mixer until thick like whipped cream!
If you want a chocolate glaze on top….
- 2 Tablespoons salted butter
- ⅔ cup chocolate chips
- 2T. milk
- Microwave the butter until melted.
- Add chips and cover, let sit one minute.
- Stir and if needed microwave in 1o second increments until melted.
- Whisk in milk.
- Spoon over tops of your puffs.

My youngest son and I made these tonight and they turned out awesome! We changed one thing, we used sugar free pudding mix. We have a lot of diabetics in our family so we tend to stay sugar free ourselves that way when we come across something like this we can share without any worries! They were delicious you would think they were loaded with sugar! Definitely making these again, and can’t wait to try different flavors!

If you add a teaspoon of baking ammonia to the water and melted butter and use an extra egg you get higher, crisper shells. )the ammonia odor goes away as they bake.

I am not sure what baking ammonia is… but if you add an extra egg, the batter goes runny and all is lost… I remade another batch flour and folded in the old batch to the original mixture to try to save it. This method worked well as most sites I came across encouraged me to start over… but a whole pound of butter and a dozen eggs is a lot to lose… it worked well. They didn’t look pretty and didn’t puff giant (probably from all the stirring) but the original runny mix would definitely not have worked…

i make these all the time , i do add 2 teaspoons of van to the batter , and you can use any flavor instant pudding mix , i dont use milk , just cream , i also melt a little bit of chocolate and cream and make a ganache and top it with that

I have made cream puffs for yrs. Aka Betty Crocker. Just put on a non-stick cookie sheet. If you don’t have the whipping cream cool whip works. Just spoon the filling in. Lots of powdered sugar! Enjoy!~ They are so easy! <3

I would do two batches. You can fill in advance but do powdered sugar before you serve. Transport on a platter.

last question i have made these before but how can i get the puffs to be more even when i cook them and drop them on the cookie sheet parchment paper — i could use more uniformity for presentation. Also some rose higher and more fluffy than others.

Hello love the idea of instant pudding, heavy cream and milk. I had a italian friend that made Italian Cream on the stove with milk and flour etc. She added cinnamon to the cooled cream pudding filling and filled the Cannoli’s, they where so good! I’m looking for the same flavor , but a easy way to make the cream filling. She is gone now so I can not ask how to make this pudding now. Still looking for that same great flavor.
