This dinner is an absolute WINNER!!!!
I used this Caesar and this Pesto!

One Pot Pesto Caesar Chicken Pasta
Ingredients
- 3 tablespoons salted butter divided
- 1 ½ pounds boneless chicken tenders cubed
- 1 tablespoon onion powder
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1 yellow onion sliced into rounds
- ½ cup homemade basil pesto-You will use it in 2 parts!
- salt pepper
- 2 cloves garlic chopped
- ½ pound penne pasta
- 4 cups water
- 2 cups milk
- 2 Tablespoon heavy cream
- ½ cup homemade Caesar dressing
- 1 cup grated parmesan cheese
- Optional: 2 cups baby spinach I made without this time
- 2 tablespoon lemon juice
Instructions
- In a deep pot set over medium-high heat, cook 1 tablespoon of butter with the chicken, onion powder, garlic powder, paprika, salt/pepper. Cook for 5 minutes until the chicken is cooked through.
- Toss with 3 tablespoons of the basil pesto. Scoop the chicken out of the pot and set aside.
- Add the garlic, onions and 2 tablespoons of butter. Cook a few mins.
- Add the pasta and water.
- Cook, stirring often, until the pasta is al dente, about 8 minutes.
- Add milk, cream, Caesar dressing, the rest of the pesto, and the parmesan. Mix until creamy.
- Slide the chicken back in, add the spinach if using and lemon juice. Stir and serve.
