Pop Rocks Ice Cream Sandwiches

You do remember eating these as a kid, right? And if you have kids isn’t it fun sharing Pop Rocks with them for the first time!!! They are like little edible fireworks exploding in your mouth! Just perfect for the Fourth Of July-or any day of the year! I used red and blue pop rocks….though was slightly disappointed n the actual hues of these colors! LOL  They were more of a sea green and pink! But, you get the idea. My kids absolutely loved these. Be sure to serve them immediately because once you get them on the ice cream the popping begins!!

Directions

Simply unwrap your ice cream sandwiches. Lay your pop rocks on a plate or wax paper and press the ice cream sandwich into the rocks. Serve immediately and watch for instant smiles!
