Salad With Hot Bacon Dressing!

My friend Suzy made this salad and it was outrageous. It is the perfect lunch to make for friends and you can customize it with all the goodies you love! This is more of a list than a recipe so you can customize the amounts based on which toppings you love and how many you are serving. I like to enjoy this salad with Hot Bacon Dressing! Ingredients

  

• romaine lettuce
• red onion sliced
• cherry tomatoes halved
• blue cheese crumbled
• avocado sliced
• grilled chicken sliced
• hard boiled eggs chopped
• roasted corn sliced off the cob
• homemade croutons

Instructions

 

• Place romaine in bottom of a large bowl and top with all your goodies.

Hot Bacon Dressing

Ingredients

  

• 6 slices bacon fried up and chopped
• ½ cup extra virgin olive oil
• 1 shallot thinly sliced
• 2 garlic cloves grated
• salt and pepper to taste
• Garnish
• parsley chopped
• 3 scallions sliced

Instructions

 

• Add some of the hot bacon into the oil (I used a mason jar) along with the other ingredients. Shake to combine. Serve the rest on the salad.
