Spinach Artichoke Pizza
Do you love spinach artichoke dip? If so, please try this pizza! The spread on the crust is based on a spinach artichoke dip and it is pureed to make a smooth topping. After that, you can be creative. Below, I have pictures of two versions I made this week. One has breaded chicken cutlets on top that I had pan fried prior. The other has grilled shrimp. Both are topped with air fried baby broccoli and mozzarella cheese! If you need a crust recipe this is my absolute favorite!!!!
Spinach Artichoke Pizza
Ingredients
Spinach Artichoke Spread (This makes a lot, save for extra pies or a dip!)
- 1 can artichoke hearts drained and chopped small
- 1 small box frozen spinach defrosted and drained very well!
- 1 cup mayo
- 1 cup parmesan cheese
- 4 garlic cloves chopped
- pinch of salt
- 2-3 teaspoons olive oil Just enough to help it in the blender
Baby broccoli
- 2 bunches
- pinch salt
- sprits olive oil
PIzza
- one crust
- ¼ c. olive oil mixed with 1 T. parmesan cheese
- fried chicken cutlets or grilled shrimp
Garnish
- chopped chives
- Mozarella cheese
Instructions
Spinach Artichoke Spread
- Place all ingredients in a blender (or bullet/food processor) and process until smooth.
Baby Broccoli
- I sprited mine with oil, sprinkled with salt and air fried 8 minutes at 350.
Pizza
- Roll out crust on parchment into a large round circle.
- Dock bottom and brush with the oil/cheese.
- Prebake in a 500 degrees oven for 8 minutes and remove.
- Top with some of your spinach artichoke spread, baby broccoli, then your chicken or shrimp and top with cheese.
- Return to oven for 8-9 minutes.
- Top with chives and the rest of the olive oil.
