I am a little confused with #5 of the filling. Do you turn oven off after they have cooked 15 minutes? These look great…can’t wait to try them!
Hugs & Cookies xoxo says
yes and let them sit in the oven with the heat off
KIMBERLY A SPOHN says
Are these mini cupcake pans or regular size? they look yummy. I did one similar in my mini cupcakes and just put an whole oreo cookie at the bottom…then used a traditional cheese cake batter. My daughter is hoping these are made in a regular size cupcake pan.
Mary says
I’m thinking these would be great to serve on our Chocolate Tour held in February around Valentine’s Day! Could they be made in a mini muffin pan (24). If so, how would the baking time be adjusted?
Hugs & Cookies xoxo says
Check them after 10 mins. 🙂
Lisette says
Wow, what a beautiful family! Teachers hold a special place in my heart. My daughter is a teacher and she says she loves her kids more than guayaba pastries (we’re Cuban). Thank you for the recipe!

Hi These look Awesome. I want to make them tonight for a party Friday night. A little confused on what size cupcake pan is used. One person asked and mini was the answer, then another asked if made in a mini pan how long to bake. So just to make sure what size pan is used? A regular size cupcake pan or the mini cupcake pan? Thank you.☺
Hugs & Cookies xoxo says
I used a regular cupcake tin.
Ellen says
I made these today. You will definitely need a large glass of milk with them if you don’t like a lot of sweet. They were very good though.
Ellyn says
I’m confused- in one response you said you used mini muffin pan and in another you said you used regular. Which is correct? I can’t wait to try them!
Hugs & Cookies xoxo says
They are mini cheesecakes but are made in a cupcake tin. A regular size tin-12 cupcakes per tin.
Jacqueline M Gleason says
I am going to enter these in a cook off. I take that it’s a regular standard size cupcake tin. My question is- How many does it make?
Hugs & Cookies xoxo says
yes, standard
Kelly says
Do you use cupcake papers or not?
Hugs & Cookies xoxo says
yes

Hi. These look amazing. I would love to make these for Xmas. With so much to do, I was wondering how far in advance could I make them and store in fridge.
Also wondering if you remove cupcake liners before serving.
Thanks

Could these be made in mini cupcake pans for Christmas and if so, how long would you bake them? Also could they be frozen with just the ganache atop? They’re beautiful! Thanks in advance!

Did you adjust the baking time? I’d like to make it as a cake
Nazeema Mohammed says
Was a winner, ended up making ganache with the melted chocolate because it was lumpy and added to the mixture, tasted divine. Also topped the cheesecake with orange flavored whipped cream.
Hugs & Cookies xoxo says
I love your orange addition-sounds fab!!!!!!
Kathie says
I just made these for Thanksgiving in 2 days. My question is when should I put the Ganache on now or on Thursday right before I put on the whipped cream. They look fabulous.
Hugs & Cookies xoxo says
I think you can do the ganache once they are cold. I agree, whipped cream Thurs! Happy Thanksgiving!

I’ve been making the mini death by chocolate cheesecakes for some time now and they are always a HUGE hit, but I have someone, believe it or not that doesn’t like that much chocolate. I love your method for baking these and I would like to make these using a golden oreo crust with some caramel instead of the chocolate genache and a standard whip cream. How can I adapt your recipe to make it a vaniila cheesecake?
Hugs & Cookies xoxo says
I have not tried that but let us know if you do. Sounds delish!
Christine O'Toole-Noel says
Can these be frozen?
Hugs & Cookies xoxo says
I haven’t tried but I would guess yes.
