This was the first time I made a pork loin and everyone loved it! Something a little different from the usual chicken dinners every night! This marinade is fabulous and so great on skirt steak, too!

Marinated Pork Loin
Ingredients
- Pork loin-about 4 pounds
- 4 crushed garlic cloves
- 1½ cups olive oil
- ¾ c. Tamari or soy sauce
- ¼ c. worcesteshire sauce
- 2 T. dry mustard
- 2¼ tsp. kosher salt
- ⅓ c. lemon juice
- 1 T. pepper
- ½ c. balsamic or red wine vinegar
Instructions
- Mix the marinade ingredients in a large dish.
- Add pork loin and cover.
- Marinate over night.
- Bake at 350, uncovered until cooked through-check at one hour for internal temperature.

That seems like a lot of olive oil. Why so much?

Because loin and alot of pork cuts are VERY lean. Lean pork dries out quickly.
