Fudgy, moist and packed with flavor, they make the perfect mint chocolate chip ice cream cake. Feel free to use any homemade brownies you may have, too! Here is one of my favorite homemade recipes!!! This would be fun to serve up on St. Patrick’s Day with mint chocolate chip ice cream since it is green. You could also switch up the ice cream flavor. A funfetti cake batter ice cream would look pretty or a strawberry for Valentine’s Day! You would also roll the sides of the cake in sprinkles to jazz it up a little more.
