Strawberry Shortcake Cookies

Strawberry Shortcake Cookies
Ingredients
- 1 cup cold butter, cubed
- 160g Caster Sugar
- 160g Light Brown Sugar
- 1 bag Hershey Strawberry Cone Kisses, chopped (255 grams)
- 150 grams white chocolate chips (I use Callebaut)
- 28 grams freeze dried strawberries, ground in food processor
- 500g all-purpose flour
- 2 tsp Baking Powder
- 1 tsp kosher salt
- 2 Eggs (last time, I needed a third egg because it was dry. Start with two and see if the dough comes together, if not add a 3rd egg.)
Instructions
- Beat butter just to break it up.
- Add sugars and combine briefly.
- Add chocolates and dried strawberries.
- Add flour, powder and salt.
- Once combined add eggs until dough forms.
- Weigh out 5 ounce mounds and bake 13 minutes at 400 degrees.
- Cool on the sheet pan to let them set up. (Best after 30 mins)
