Strawberry Vanilla Drip Cake
This strawberry vanilla drip cake is the perfect treat to make when you score some HUGE and beautiful strawberries. My hubby found these at Whole Foods and they tasted just as great as they look. The cake is pretty basic, 3 vanilla layers and loads of frosting! My favorite is the chocolate drip made from warm ganache. I like to apply it using a squeeze bottle, if you have one! Strawberry Vanilla Drip Cake
Ingredients
Cake
- 2 ½ c. flour
- 2 ½ tsp. baking powder
- ½ tsp salt
- ¾ cup room temp butter
- 1 ½ c. sugar
- 3 T. canola oil
- 1 T. vanilla
- 4 eggs
- 1 ¼ c. whole milk
Frosting
- 1 ½ c. butter
- 1 ½ c. shortening
- 12 c. powdered sugar
- 1 T. vanilla
- 6 –7 T. milk
Drip
- 6 oz semi-sweet chocolate chips
- ½ cup heavy cream heated just until almost a boil
Decoration
- Large strawberries
Instructions
- Preheat oven 350
- Spray three 8-inch cake pans with Pam and line bottoms with parchment rounds.
- Beat butter, sugar, oil and vanilla 4 mins.
- Add eggs.
- Combine flour, bak powder and salt and add half of this to the mixer.
- Slowly add milk.
- Add rest of the dry ingredients. Don't be alarmed if it looks clumpy!
- Divide into pans and bake for 22-25 mins.
- Cool and then I like to freeze the layers.
Frosting
- Beat butter and shortening.
- Add half the sugar on low!
- Add vanilla and slowly start adding the milk.Add rest of the sugar.
Assembly
- Lay one cake on platter and top with 1 cup of frosting.
- Repeat for next layer and top with 3rd cake.
- Frost entire cake.
Drip
- Pour hot cream over chips and let sit 1 minute in heat proof bowl. Whisk smooth and pour into squeeze bottle.
- Squeeze drip around cake and then fill in the top of cake with the extra chocolate.
- Chill.
- Pipe on more frosting in swirls and add strawberries!
