Rolo Cheesecake Bars

Are you ready for an insane recipe? Once you make these Rolo Cheesecake Bars, you will be hooked. Cheesecake+Rolos=perfection! These are probably one of my most favorite cheesecake bar recipes. I hope you love them, too. I have a feeling you will. xoxo

You may need:

9×13 pan

ROLO CHEESECAKE BARS....INSANELY DELISH!!!!!!!!!!!

Ingredients
  

CRUST:

  • 3 cups of graham cracker crumbs
  • 1 cup sugar
  • 2 STICKS MELTED BUTTER 16 TABLESPOONS

FILLING:

  • 2 8- OUNCE PACKAGES OF CREAM CHEESE
  • 2 EGGS
  • 1 C. SUGAR
  • ¼ C. FLOUR
  • 8 ounces rolo minis unwrapped
  • GLAZE:
  • 1 STICK BUTTER
  • 6 OUNCES CHOCOLATE CHIPS.
  • 4 TSP. LIGHT CORN SYRUP.

Instructions
 

Crust

  • STIR ALL TOGETHER AND PRESS INTO A 9X13 PAN LINED WITH NONSTICK FOIL.
  • BAKE AT 350 FOR 7-10 MINUTES AND COOL.

Filling

  • Beat cream cheese. Once smooth, add sugar.
  • Add eggs one at a time.
  • Add flour.
  • Stir in rolos.
  • Bake at 350 for 30-35 minutes.

Glaze

  • Melt butter and chips.
  • Stir in corn syrup.
  • POUR SMOOTHLY ON BARS AND CHILL OVERNIGHT.
  • CUT WITH A BIG KNIFE! I ADDED A CHOCOLATE DRIZZLE AND A HALF A ROLO ON TOP!

      I don’t know if I’m allowed to say this.But for those who also love a nuty spicey sweet taste,add a few walnuts and some cinnamon to your crust.

      Of course grind it up with your Graham crackers and real butter.

    Just came across this recipe. OH MY GOODNESS! I need to try this! Before I do I have a question. Where do you find mini rolos? How big is the bag? We have tubes of rolos but I think there are 7 in a tube – looks like you use more! Also the choclate drizzle you top the cheesecake with. Is this a bottle of drizzle or do you make it? Thanks

    VAN PINX-Let them sit out for maybe 20 mins and then cut them all up! Chill again and before serving let them sit out again to soften the rolos. Glad you enjoyed them!!!

    I am trying these now but it all fell apart at the glaze. Don’t know what I did wrong but the butter and the chocolate chips went all funny and grainy looking and started to harden. They didn’t go all runny and smooth even though I added the Light Corn syrup. What am I doing wrong I wasted an entire bag and got terrible results. I’m reluctant to buy another bag only to have them go funny again on me again. Ive used chocolate chips for other recipes and put them in the oven for a few minutes and they melted smoothly, should I skip the butter?

    Heidi-sounds like the chips scorched from overheating in the microwave possibly? Heat at just 30 second intervals and stir.

      As long as you grease the pan you can skip it-I just LOVE nonstick foil for baking.

    I also LOVE nonstick foil!!! Use for everything!! But, call.me a duh but doesn’t the foil
    tear when you go to cut the bars? Last thing l want to do or anyone else is to bite into a small.piece of the foil!!

      hahaah yes the knife tears into it but i cut on a cutting board and just pick up each bar right off the foil as I cut-hope that makes sense 🙂

    Why is t he drizzle lighter then the glaze? do you put the drizzle after chilling overnight? I had to make these tonight they look delicious

      The drizzle is just melted choc chips drizzled on. It is not the glaze. Hope yours came out great!!!!!

    Hi am in Scotland and really want to make the rolo cheesecake as it looks amazing , however I can substitute the crackers for biscuits however re the sticks of butter how many oz would that be as ours come in 8oz blocks, also 1c does that mean one cup and if so what size and finally rolo’s ours come in small packs about 10. In a pack so again how many as so want to make this as looks amazing. Thank you Carole x

      1 stick butter=4 ounces
      1c-1 cup
      I would buy a few packs of rolos and “eyeball” it 🙂

    I made these a few months ago and they were perfect! Yesterday I made them again, but I substituted mini reeses for the rolos and added peanut butter chips to the glaze. Sooo good!

    I made these for a church party and they were gone before I ever got to the dessert table. I did cut the butter and sugar in half in the crust and it turned out wonderfully. Thanks for the great recipe!

    I just want to make sure I’ve got this right…
    Bake crust then remove from oven and spread with filling before cooling? Don’t cook the bars anymore, right? Make glaze and pour on “hot? or chilled? bars.
    Sorry about the dumb questions. ????
