This is the best meatloaf ever!! Thanks for the recipe, Mom!!!!

You’ll Need:

MOM'S FAMOUS MEATLOAF!!!!!

Ingredients
  

Meatloaf

  • 1 or 1 1/2 pound meatloaf mix Meatloaf mix is sold in one package and is a combo of ground veal, pork and beef in equal parts.-You can also use all ground beef if you prefer.
  • ¾ c. diced red onion
  • ½ c. diced celery
  • 2 eggs
  • ¼ c. soy sauce Or use Tamari to make it gluten free
  • ⅓ c. ketchup
  • 1 T. dried oregano
  • 1 T. chopped parsley
  • 2 tsp. garlic powder
  • sprinkle black pepper
  • 1 c. quick oats

Topping:

  • ¼ c. light brown sugar
  • ¼ c. ketchup
  • 3 T. stone ground mustard
  • ½ tsp. paprinka
  • ½ tsp. pepper

Instructions
 

  • Preheat oven 350. Bake in a round pyrex dish or in nonstick mini loaf pan. Mix all meatloaf ingredients together and place in pan. Mix all topping ingredients together and brush on top. Bake until it reaches 160 degrees. (One loaf pan is about 75-85 mins. Check mini loaves earlier)

      Like the lady said, you see it in meat case at your grocer. It is a prepackaged sale of the most commonly selected mix of ground meats used in making a tasty meatloaf. You can always mix and match your own ratios by making separate purchases of your choice of ground meats.

      I have a similar recipe. Instead of using a pan just make several small meatloafs placed on a cookie sheet covered with parchment paper. The meatloafs will stick to aluminum foil even if is sprayed.

    Donna-I am sure you could-texture may be different though.

    Luisa-start checking internal temp at 40 mins. needs to be 160

    I made this the other night not sure if my picky eaters would like it and they did. I could not find veal at any of my local grocery stores, so I used ground lamb and it still tasted really good. I will definitely make it again.

    I love this recipe. Other than one change I love it. Because our stores don’t have the 3 meat packs, I made this with the Ground Chuck and Crumbled breakfast sausage or Italian sausage!! It was great. I have bought pond of each of the three meats and frozen a mass of meatloaf, but that is too much for my freezer usually. I freeze the meat in meals for 2 size sealed bags. If I need more I just open the appropriate amount. I freeze the uncooked Meatloaf in the tins, then remove and seal into bags.
    Thois is a big hit when the family comes to visit!! Instead of cooking for 2, I am cooking for 6-8.

    I decided to try this meatloaf recipe, because I found the recipe I’ve been using for years to be not that great and I just KNEW that there had to be a better one out there somewhere, and this is IT! Hubby and I LOVED it and my granddaughter tried some and she loved it as well. She even asked me to share this recipe with her mother (my daughter), because her mom’s meatloaf was awful! LOL Thanks for this fantastic meatloaf recipe. It’s definitely a keeper!

    Reading the comments, seems like I’m the only dummy to misread “stone ground mustard” as “ground mustard seed”. After I scraped off the tongue-burning top it tasted great! The inside of the loaf was delicious though, so I’ll be making this again the *right* way!

      Uh… So I have been using ground mustard seed the whole time. (I did cut the pepper amount down; too spicy otherwise.) I feel so stupid. But my family loves it. So I am going to keep making it the way I make it, I guess! But boy do I feel stupid.

    Great recipe! I substituted ground turkey and cut the oats by half. Cooked them 45 minutes in the mini loaf pans. The leftovers were gone the next day! Thank you for sharing!
