Cobb Pasta Salad
Cobb Pasta Salad makes a beautiful lunch or even a side dish for dinner. You can switch it up by adding different veggies and proteins. This would be fabulous with grilled shrimp or even leftover steak!
Cobb Pasta Salad
Ingredients
- *Note: Next time, I will double this dressing-depends how much dressing you like!)
Dressing:
- ½ cup olive oil
- 1 tsp.lemon zest
- ¼ c. fresh lemon juice
- 2 tsp. honey
- 1 tsp. dijon mustard
- 2 cloves garlic, minced
- Kosher salt and black pepper, to taste
Pasta Salad:
- 1 lb penne pasta, cooked according to box
- 1 lb chopped up chicken or turkey (I roasted a boneless turkey breast)-or even add shrimp!
- 6 strips bacon, cooked well done and chopped
- 2½ c. halved grape tomatoes
- ½ red onion, chopped
- 3 scallions, sliced
- Chives, chopped
- 1 c. shaved or shredded Parmesan cheese
- ½ c. chopped fresh basil
- Kosher salt and black pepper, to taste
Instructions
- Whisk dressing ingredients together and pour over pasta.
- Top with all of the chopped goodies and toss well!
- Season with salt/pepper.
- (If you double the dressing, pour it on slowly for your desired amount. You may not need it all.)
