Easy S’mores Cookie
Easy S'mores Cookie
Ingredients
- ¾ cup salted butter
- ½ cup granulated sugar
- ½ cup light brown sugar
- 1 egg
- 1 tbsp vanilla extract
- 2 cups all purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 2 cups chocolate chips
- 2 cups mini marshmallows
- 1 cup chocolate chips, melted for drizzle
- graham crackers just to crush on top at the end
Instructions
- Preheat the oven to 375℉
- Beat butter and sugars in a mixer.
- Add egg and vanilla, scraping sides.
- Add flour, baking soda and salt.
- Add chocolate chips.
- Scoop 3 ounces of dough out and stuff 5 mini marshmallows in the center enclosing them tightly. Lay on parchment paper.
- Bake for about 10-11 mins. Keep an eye on them the first time as everyone's oven is different! Use a large cookie cutter to help round the cookie when out of the oven.
- Cool a few mins and drizzle with melted chocolate. Sprinkle on some smashed graham crackers, if desired.

Sorry-this is just grahams crushed on top of the cookie. Here is the same recipe but with a cracker on the bottom!
