Fig Balsamic Glazed Salmon
Fig Balsamic Glazed Salmon makes a fabulous weeknight meal but is yummy enough to serve on a weekend for company, too! I purchased my fig balsamic vinegar from The Crushed Olive. You will need 1/3 c. which the exact size of the smaller bottle. A perfect match. You will cook up the glaze on the stovetop and brush it onto the salmon. After a short trip into the oven the salmon will flake up perfectly using 2 forks or my favorite-the pampered chef shredders! I served this over a combination of arugula and romaine with my yummy mason jar dressing. I also added some chopped boiled eggs and sliced red onions. Hubby rated it a 10 so we will be enjoying this again soon!

Fig Balsamic Glazed Salmon
Ingredients
- 1 pound king salmon
Fig Balsamic Glaze
- 4 minced garlic cloves
- 1 T. white wine
- 1 T. honey
- ⅓ c. fig balsamic
- 1 T. plus 1 tsp. dijon mustard
- salt/pepper
- chopped parsley for garnish
Instructions
- Lay salmon on foil lined jellyroll pan.
- Add sprinkle of salt and pepper.
- Make glaze
Glaze
- In a pot, combine garlic, wine, honey, balsamic and dijon.
- Bring to a boil and lower to a simmer for 2-3 mins till thickened.
- Pour some in a bowl for when salmon is done. Brush remaining onto salmon.
- Bake at 400 for 15 mins.
- Top with rest of glaze and fresh parsley.
- Flake and place on top of salad.
