The Bear Sauce
Have you watched The Bear on Hulu? This sauce recipe comes from the show and is out of this world! An absolute must try!
This can be easily doubled, too! I stored it in 4 mason jars.

The Bear Sauce
Ingredients
Garlic Basil Oil
- ¼ cup olive oil
- 5 smashed garlic cloves
- 1 handful basil stems fine too
- ½ tsp. red pepper flakes
Sauce
- 28- ounce canned whole tomatoes
- 4 T. Salted butter
- 1 T. Canola oil
- 1 onion slice in half through root and peel away skin
- 1 tsp. salt
Instructions
- Basil Oil
- Place all in skillet and bring to a boil.
- Lower To a simmer for 2 mins to wilt basil. Remove heat, add pinch salt and let steep.
- Let cool and food process a few times.
- Sauce
- Heat butter and oil, letting butter start to brown.
- Add onion halves cut side down and let brown about 2 mins.
- Add tomatoes and break into smaller pieces.
- Add salt.
- Raise heat to a boil then cover and simmer on low 20 mins.
- Uncover and add basil oil.
- Simmer uncovered 10 mins.
- Remove and discard onions.

Last time I made this, I tripled the sauce (only 2 onions and removed after 2 hours-also added a parmesan cheese rind for 1 hour), used 1 can crushed, 2 cans whole, doubled the basil oil (and added 2 anchovies). When I added the food processed oil, I added just the goodies and tried to leave the oil behind. I pan fried 1 lb sausage and added it. I made meatballs and pan fried them, too, before adding to the sauce. (1 pound meatloaf mix, 1 egg, 1 c. parmesan cheese, 3 T. heavy cream, 3 garlic cloves, 3/4 tsp. salt, 1/3c. panko (1/2c. was too dry last time), handful parsley) Simmered 4 hours very low and skimmed off any excess oil at top. Cracked top slightly for last 60-90 mins first few hours covered. Add salt as go by taste.
