This fudge is a great choice for remembering Joan. She was all about the easy, uncomplicated desserts and she LOVED fudge. I remember her excitement over this recipe this past summer. She had no patience for the thought of waiting until the holidays to enjoy your favorite treats!

Only began following blogs in March, but Joans’was one of my first. Hubby loves chocolate and I love to bake and cook so… Seems all the blogs I follow say the same wondrous things about Joan. Have a board on Pinterest in honor of Joan, “The Best of Chocolate”.Goal is to pin ALL of Joans’creations, but also those of her friends as well. You all spread her love and shared. Personal stories about Joan. Her spirit will live on, as well as her blog. Pray for the family and all if you to find peace and comfort at this time. Such a wonderful, be it all too short, life and legacy Joan has!

Probably not enough chocolate in the batch to make it firm up. Did you use 16 oz of chopped chocolate and was it a firm chocolate bar to begin with. (there are firmer and softer chocolate bars on the market).
Try adding more chocolate to the mixture, it may firm it up. Or use some powdered (aka #10, Confectionery or Icing) sugar. That will also firm it up for you.

You has to bring to a rolling boil for 6 full minutes, that is the key problem if your fudge was to soft.

    Consider Substituting:
    Butterscotch Chips
Cherry Chips with thin layer of melted Chocolate Chips on top
White Chocolate Chips with a tint of green food coloring and a hint of Mint flavoring to taste
18 oz. Creamy p-nut butter and one can of white prepared frosting for a rich creamy Fudge. (also makes a nice top layer over the original Chocolate Fudge …. but use one size larger pan or it will be too
    thick)
Consider the pink cherry batch over the mint green one for a pretty Spring treat.
Use your imagination with flavors and colors.

I love making this quick and easy fudge but I make an addition of a stick of butter or 1/2 cup of peanut butter. It comes out softer but cuts beautifully and has a better texture. I also like to add tons of chopped nuts. My favorite version is chocolate peanut butter with walnuts. This is equally good if not sweeter using butterscotch chips or a combination of chips. The sky’s the limit!

Yes, a whole stick of butter. It needs to be refrigerated until it sets up and that means the butter gets firm again. It’s so hard to wait once you smell that delicious chocolate aroma in the house.

A common mistake people make is in using evaporated milk thinking it’s the same as sweetened condensed – NO WAY! That would leave the fudge runny.
