Chicken Francese With a Parmesan Twist
Ingredients
Chicken
- 3 chicken breasts sliced in half and pounded thin
- 1 ½ cups flour
- 6 eggs beaten
- 5 garlic cloves minced
- 1 ¼ cup Parmigianno Reggiano cheese
- 1 handful parsley chopped
- 1 T. olive oil
- 1 T, butter
Sauce
- 1 T. olive oil
- 1 T. butter
- 1 shallot chopped
- 1 cup chicken broth
- ½ lemon juice squeezed
- parsley chopped
Instructions
- Season chicken with salt and pepper and dredge in flour.
- Next dip chicken into a mixture of the eggs, cheese and parsley.
- Heat oil/butter in skillet and fry chicken until browned on each side. Remove to a plate.
- For the sauce, heat oil/butter and sautee shallots.
- Add broth and lemon juice and reduce a bit. Season with salt/pepper and either return chicken to the sauce or serve with sauce on the side. Garnish chicken with parsley.
