Banana & chocolate all rolled up into one cookie= Chunky Monkey Cookies! This recipe includes instant pudding which is where our banana flavor comes from. You can have fun and change up the pudding flavor to change the cookie flavor! It also uses coconut oil instead of butter, making it a bit healthier! The oil makes them nice and thick, too!!!!

Chunky Monkey Cookies
Chunky Monkey Cookies
Ingredients
- ¾ cup melted coconut oil
- ¾ cup light brown sugar packed
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- one 3.5-ounce packet instant banana pudding mix use vanilla if you don't want banana flavor
- 1 teaspoon baking soda
- pinch of kosher salt
- 2 cups semi-sweet chocolate chips
Instructions
- Beat oil, sugars, egg and vanilla medium until combined.
- Add the flour, pudding mix,baking soda and salt. Beat just till combined.
- Stir in chocolate chips.
- Use your hands to form about 12 balls of dough. It's a litte tricky to work the doug so just press tightly together and stick in any resistant chips.
- Chill this dough for 30 mins in freezer, covered or place in fridge to chill for a few hours.
- Preheat oven to 350F and line a cookie sheet with parchment. Bake for about 10-12 minutes. Do not overbake-they will finish baking as they cool on sheet.

What is instant banana/vanilla pudding mix?? Is it like “angel delight” or blancmange or?? Can you suggest any other healthy alternatives please?

Just mash up an over ripe banana or 2, I never follow the recipe. I don’t like the way artificial banana tastes. I also substitute all sugar with honey, & cows milk with almond milk. It’s really easy to fix a recipe; the original is just a base to play with & mold to your liking.

You can buy it at Walmart but Sam’s Club has the best price. It is so healthy for you, please google it to learn more. I replace the butter and oils in my baking. The cookies, cakes, and breads are so moist.

This is the worst chocolate chip cookie I have ever had. The picture looks wonderful but the cookies that are produced from this recipe do not look anything like it. The cookies come out looking like large, pale balls with chocolate chips. I wanted something like the picture and it didn’t even come close. The cookies taste like sweet paste. They are cooked through but taste like paste. I followed the directions exactly…very poor cookies and a waste of money and ingredients.

Hmm not sure what went wrong for you. Are you sure you followed the recipe exactly? The picture is from the exact printed recipe and it always gets rave reviews! Could your oven possibly working at a diff temp?

I wanted to print this recipe – only – and got 1/2 page of recipe and 3 1/2 pages of pictures. Way too many pictures, one would be enough. Waste of paper and ink. Can anything be done to remedy this? Thanks.
