Parmigiano Reggiano Chicken Thighs
This dinner was a clear winner and I am adding it to the weekly rotation!
Also fabulous with green beans!
Parmigiano Reggiano Chicken Thighs
Ingredients
- 2 lbs boneless, skinless chicken thighs
- Extra parmigiano cheese garnish
- parmigiano reggiano cheese rind, optional for a nice garnish
- chopped parsley garnish
- chopped chives garnish
Marinade
- ¼ cup olive oil
- 1 lemon, juiced
- 5 garlic cloves, mined
- 1 tsp. paprika
- 1 tsp. garlic powder
- ½ tsp. onion salt
- small handful fresh dill, chopped
- ¼ cup freshly grated parmigiano reggiano cheese
Instructions
- Preheat broiler.
- Combine all marinade ingredients and pour into a ziplock bag with the chicken.
- Marinate 30-60 minutes shaking the bag well to coat the chicken evenly.
- Lay chicken in a cast iron pan and broil 15 mins or until internal temp is 165.
- Remove from oven and add cheese rinds, parsley, chives, cheese
- I like to serve with broccolini. I pan fry it with garlic/oil and add into the chicken at the end.
