Peanut Butter Cheesecake Bars

I AM NOT SURE IF YOU BROUGHT YOUR STRETCHY PANTS BUT YOU’RE GOING TO NEED THEM! THESE ARE WORTH THE CALORIES, TRUST ME! THIS IS A TRUE PEANUT BUTTER LOVER’S TREAT! LET’S GET STARTED!

You May Need:

Nonstick Foil    

8 inch pan    

Reese’s Cups

Peanut Butter Cheesecake Bars

Ingredients
  

Graham crust

  • 1 stick butter
  • ½ C. sugar
  • 1 ½ C. graham cracker crumbs

Peanut Butter Cheesecake

  • 8 ounces cream cheese
  • 1 egg
  • ½ C. sugar
  • ¼ C. peanut butter

PB Ganache

  • ½ c. heavy cream
  • 8 Tablespoons butter
  • 6 ounces peanut butter chips
  • 2 T. sifted powdered sugar
  • *** Will need snack size reese's

Instructions
 

Crust

  • MELT THE BUTTER IN THE MICROWAVE IN A BOWL. STIR IN SUGAR AND CRUMBS. LINE AN 8 INCH PAN WITH NONSTICK FOIL AND PRESS THE CRUMB MIXTURE IN. BAKE ABOUT 9 MINS AT 350 AND LET COOL. ONCE COOL, LINE THE CRUST WITH SNACK SIZE PEANUT BUTTER CUPS TO COVER THE BOTTOM.

Cheesecake

  • ELECTRIC MIX CREAM CHEESE AND SUGAR. ADD EGG AND PEANUT BUTTER. POUR OVER PEANUT BUTTER CUPS AND SPREAD OVER CRUST. BAKE 30 MINUTES AT 350. LET COOL COMPLETELY.

Ganache

  • combine cream and butter in saucepan until hot.
  • Stir in chips till smooth.
  • Add sugar and pour over bars.
  • Chill firm before cutting. Cut into 9 squares and drizzle melted dark chocolate chips on top of each bar. Keep chilled!

    How much is a stick of butter in your peanut butter cup cheesecake bars? 1 cup? I bought a stick of butter and used the whole bar and it’s definitely way too much. Instead of being like a crust, it looks more like soup.

    I was at the store and they didn’t have ANY cream cheese so I got cream cheese filling , the question being can I substitute the filling for the cream cheese in the peanut butter cheese cake over pb cups recipes

    Add just a tiny splash of whipping cream and it will be a little easier to spread also I added a touch more peanut butter than it called for

    Hello!!! Yum!!! In ur opinion, do u think this could be adapted and made into a 9 inch cheesecake using a springform pan? I’ve done Reese and Buckeye cheesecakes… But this one looks amazingly delicious and unique! So, I would LOVE to try it… But want ur opinion… Thanks much!!!

    I just made these again today. The girls at work loved them when I brought them. This time when I made them I doubled the recipie and instead of using a graham cracker crust I used a choc chip cookie crust

    At the ganache part it says to pour over bars and then at the end it says to melt dark chocolate chips and drizzle, So my question is, Do I pour all that ganache mix over bars and THEN on to of that drizzle the dark chocolate? I’m only asking because in the pictures it doesn’t have the chocolate poured over it with drizzle, it ONLY has the drizzle, am I missing something?? Lol plz let me know asap because I’m making these as a surprise for my 7yrs olds celebration dinner for him becoming a part of my family legally!!!! I’m SO HAPPY and he deserves this!! Thank you so much…
