Banana Bread Cheesecake
I love banana bread and I love cheesecake so this was a no-brainer combo in my world! If you adore them both, you have to try this banana bread cheesecake! Serve it with whipped cream, caramel or even hot fudge! Yum!
You may need:
9 inch springform pan
Banana Bread Cheesecake
Ingredients
- 4 very ripe bananas
- ¼ cup vegetable oil
- 1 egg
- ½ cup sugar
- 1 teaspoon vanilla
- 1 ½ cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon cinnamon
Cheesecake
- 32 oz soft cream cheese
- ½ cup sugar
- 1 tablespoon vanilla
- 1 cup milk
- 1 tablespoon gelatin powder
Instructions
- Preheat the oven to 350°F (180°C).
- Mash the banana with a fork.
- Add the oil, egg, sugar, and vanilla.
- Add the flour, baking powder, baking soda, salt, and cinnamon.
- Stir to combine.
- Pour batter into greased 9-inch springform pan.
- Bake for 30-40 minutes, until the top is set.
Cheesecake
- In a mixer, beat cream cheese, sugar, and vanilla.
- Microwave the milk until hot, and add gelatin powder.
- Stir fast to dissolve gelatin. (stir 5 mins)
- Pour the gelatin mixture over the cream cheese and whisk smooth.
- Pour this cheesecake mixture over the baked banana bread crust.
- Chill for a minimum of 4 hours.
- Unmold the pan, slice and serve!
- I topped mine with chocolate dipped banana slices.

I made this yesterday and all my family loved this! The recipe was phenomenal. I used a whole block of cream cheese and ended up dicing up fresh strawberries and added them to the cheesecake mixture. I didn’t have any vanilla so I used cinnamon and the whole loaf was gone in a day.

It seems like a lot of effort to make this cheesecake as you need proper utensils for it. I think I will wait for them to open in my town, and then I can order the cake and satisfy my craving.

That’s a LOT of cream cheese! I expected more of a cheesecake flavor but mine turned out more like a brick of cream cheese over a not-very-sweetened banana bread.
