Homemade Chipwiches
Love chipwiches from the ice cream man? Then, you are in a for a real treat now that you can make them at home. Making your own opens a world of options. Forget plain vanilla ice cream and think cookie dough, pistachio and cherry garcia! Then, there are the side toppings. Instead of just mini chocolate chips, think: rainbow sprinkles, peanut butter chips or crushed toffee pieces!
If you don’t have a mold, use a sharp knife to cut ice creamcircles right through your container carefully!
You may need:

Homemade Chipwiches
Ingredients
Cookies
- 1 cup soft butter
- ¾ c. sugar
- ¾ c. brown sugar
- 1 tsp vanilla
- 2 eggs
- 2 ½ cups flour
- 1 tsp. baking soda
- 1 tsp. kosher salt
- 12 ounces chocolate chips
Ice cream
- Any flavors you want!!!
Toppings
- mini chocolate chips
- rainbow sprinkles
- crushed toffee
- anything else you love
Instructions
Cookies
- Preheat oven to 350.
- Line 9x13 with nonstick foil.
- Beat butter & sugars.
- Add vanilla and eggs
- Add dry ingredients.
- Add chips.
- Press in pan and bake 25-30 mins.
- While still warm, cut round circles with a cookie cutter. and then let cool completely.
Assembly
- Sandwich ice cream between 2 cookies (using a mold or cut rounds of ice cream by cutting through a pint sized container) Roll in toppings and keep frozen!
