This is a perfect sized treat for cheesecake lovers that cannot be trusted near an entire cake! The crust is made from Nilla wafer cookies making these super simple to prepare!
Mini Cherry Cheesecakes
Ingredients
- 16 ounces cream cheese
- ½ cup sugar
- 3 eggs
- 1tsp. Vanilla
- 1 box Nilla Wafers
- 1 can cherry pie filling
Instructions
- Line a muffin tin with muffin cups.
- Beat first 4 ingredients until smooth.
- Lay a Nilla wafer in the bottom of each muffin cup.
- Pour batter in the muffin cups and bake at 350 for 15 mins.
- Top with cherries when cool.

Make sure the cream cheese is very soft.

Have cream cheese at room temperature I leave mine out over night and use mixture to blend

Do you crush the wafers? if you cannot get the wafer what can you use as a replacement?

No, just drop it in the bottom of the cupcake liner. Then pour batter over the top. It will form a nice bottom crust.

I love this recipe and have been making it for over 40 years. It came from a fellow teacher and I have no idea where it came from before then. I also saw it on a Paula Deen show where she claimed she had created it. But I’m glad to see it has now spread around the country and others will enjoy these delightful and easy to make desserts. I always make them for my Christmas Open House table. They are beautiful to look at and even better to eat.
