Peach Pie Crumb Bars
Ingredients
Crust:
- ¾ cup flour
- ¼ cup powdered sugar
- pinch of salt
- 6 T. butter cold and cut into pieces
Peach Filling:
- ¼ cup peach preserves Or raspberry, strawberry
- 2 cups fresh peach slices 2-3 peaches, peel, remove pit and slice
- 1 teaspoon fresh lemon juice
- 2 T. flour
- 1 teaspoon cornstarch
- ¼ teaspoon cinnamon
Topping:
- 4 T. butter cold and cut into pieces
- ½ cup flour
- ½ cup packed brown sugar
- 1 tablespoon sugar to sprinkle over peaches
Instructions
- Preheat oven to 375º.
- Line an 8 x 8-inch baking pan with non-stick foil.
Crust
- Combine flour, powdered sugar, salt.
- Cut butter into dry ingredients till the butter is the size of small peas (Can use a food processor or mixer).
- Sprinkle the mixture into the bottom of pan and press evenly.
- Bake 10-12 minutes or till just starting to brown.
- Spread preserves on top.
Filling
- Mix peach slices with lemon juice.
- Toss the peaches with the four, cornstarch and cinnamon
Topping
- Mix butter, flour and brown sugar until crumbly.
- Place peach slices, overlapping slightly if needed, in a single layer across the jam.
- Sprinkle with the 1 tablespoon of sugar.
- Sprinkle on the streusel topping.
- Bake 25-30 minutes or the filling is bubbling and the topping is golden brown.
- Cool completely before cutting.
- Top with ice cream and a caramel drizzle, if desired.

Can you use frozen peaches?

These look so good! Wondering if you can use canned or frozen peaches for this? No sight of fresh peaches this time of year around here. 🙁 Do you think they can be frozen after baking? I always freeze the raspberry ones and lemon ones that I make using the Raspberry crumb bar recipe. They are just like fresh when I take them out of the freezer.
