Brookie Bars
Brookie Bars are what you get when a brownie falls in love with a cookie! This bar is the perfect marriage of two loved desserts. On the bottom layer you have a moist delicious brownie which is then topped with a ruch chocolate chip cookie layer. Serve these up with tall glasses of ice cold milk. The kids are going to love these, too. What a perfect lunchbox snack these would make. Even better if you sneak it in as a surprise snack!

Brookie Bars
Ingredients
brownie
- 2 c.sugar
- ⅔ c. cocoa powder
- 1 c. melted butter
- 4 eggs
- 2 tsp. vanilla
- 1½ c. flour
- ½ tsp. salt
Cookie Layer
- 10 T. soft butter
- ⅔ c. light brown sugar
- ⅓ cup white sugar
- 1 egg + 1 additional egg yolk
- 1 tsp. vanilla
- 1⅔ c. flour
- ¾ tsp. baking soda
- ¾ teaspoon salt
- 1 cup chocolate chips, plus a few extra to sprinkle on top
Instructions
Brownie
- Preheat oven 350 degrees F.
- Line a 9 x13 pan with nonstick foil.
- Stir together the butter, sugar, eggs and vanilla.
- Add flour, cocoa, salt.
- Spread in pan.
Cookie dough layer
- Beat butter and sugars.
- Add eggs and vanilla.
- Add dry ingredients.
- Fold in chips.
- Flatten pieces of dough in hands and lay across the brownie to cover.
- Sprinkle on a few more chips.
- Bake 32-35 mins.
- Cool and cut!
