Had to make the most amazing oven roasted corn again!!!! Amazing! You can go beyond the 40 minute baking mark if you like it even a deeper brown!!!!! yum! Don’t forget to top it off with butter, salt and pepper to create the ultimate roasted corn experience!
Preheat oven to 400!
Very generously season your corn on the cobs with kosher salt and pepper. Add a pat of butter to the tops and roast on a small jellyroll pan (lined with nonstick foil) for 30-40 minutes, or until starting to brown! While it’s cooking, turn the corn occasionally. Simple and completely amazing!!!

If you are a corn lover, try putting a good Mexican salsa (one that you personally like), maybe one that has mango,. Use a generous amount of salsa on each ear of corn while being placed on a sheet of aluminum foil. Wrap the ear of corn in the foil and bake for 30 or so minutes. Turn each ear occasionally during the baking. Tastes fantastic.
